Poached peaches, raspberries & cream

1. Combine water and sugar in a medium saucepan. Stir over a medium heat, until sugar dissolves. Bring to the boil, without stirring.
   
   
2. Add whole peaches and simmer, uncovered, for 8 minutes. Turn heat off and set aside for 5 minutes. Remove peaches from syrup. When cool enough to handle, peel skin off.
   
   
3. Return syrup to a medium heat, and simmer for 10 minutes to reduce and thicken. Cool for 5 minutes.
   
   
4. Place peaches in serving bowls with a portion of raspberries. Pour syrup over and serve with cream.

• If liked, add a split vanilla bean or 1 teaspoon of vanilla bean paste to syrup during cooking.
