Mushroom burger
Great for kids (and big kids!)
INGREDIENTS
4 flat mushrooms
(or 8 smaller ones), trimmed
2 roma tomatoes, halved
4 rolls, halved, toasted
1 red onion, thinly sliced
60g baby rocket leaves
METHOD
- Preheat oven to moderate, 180°C . Lightly grease an oven tray.
- Arrange mushrooms and tomatoes on prepared tray. Drizzle with oil and bake for 15-20 minutes, until beginning to soften.
- Place a mushroom and tomato on one half of each roll. Finish with red onion and rocket. Serve with chips, if liked.
TOP TIP- Drizzle mushrooms with balsamic vinegar while baking.
