Duck with Indonesian-style noodles
INGREDIENTS
450g packet fresh thin hokkien noodles
2 cups shredded barbecued duck flesh
1½ cups mixed sprouts (mung, alfalfa, snow peas)
4 hard-boiled eggs, halved
½ cup peanuts, roughly crushed
METHOD
- Prepare noodles following packet instructions. Drain well and place in a large bowl. Allow to cool.
- Toss through duck and sprouts. Top with hard-boiled egg and nuts.
- If liked, drizzle with dressing of choice, such as Vietnamese dipping sauce, satay sauce, prepared Asian dressing or a combination of kecap manis and lime juice.
TOP TIP- Try adding some quartered cherry tomatoes.
- An Asian leaf mix can be used, if preferred.
