Baked spinach eggs

baby spinach, 150g packet
cherry tomatoes, 250g punnet, halved
grated four cheese blend, 1 cup
thickened cream, ¾ cup
toast, to serve
- Preheat oven to moderate, 180°C. Lightly grease four, 1¼ -cup ramekins.
- Divide spinach leaves, tomatoes and cheese evenly among dishes.
- In a small jug, whisk cream and eggs together. Season to taste. Pour egg mixture evenly into dishes.
- Bake 30-35 minutes, until puffed and golden. Serve with toast.
