Bean nachos for $10

INGREDIENTS
400g can mexi-beans
200g packet corn chips
1 cup grated tasty cheese
1 avocado, seeded, peeled
juice ½ lime
250g tub light sour cream
sliced green onion to serve
METHOD
- Preheat grill, on high.
- Spoon beans into a frying pan. Heat on low for 2-3 minutes, until hot.
- Divide corn chips evenly between 4 heat-resistant ramekins. Top each with an even amount of mexi-beans and cheese. Grill for 2-3 minutes, until cheese melts.
- In a bowl, mash avocado with lime and season to taste. Serve nachos topped with avocado and sour cream. Sprinkle with onion.
Top tips- Add sliced onion and a dollop of prepared salsa, if liked.
- This can be made in one large dish and baked in a moderate oven, 180°C, for 5-10 minutes.
