INGREDIENTS
1.5kg (7 cups) sugar
25g tartaric acid (see tip)
9 cups boiling water
finely grated zest and juice 2 oranges
finely grated zest and juice 2 lemons
METHOD
In a jug, combine sugar and tartaric acid. Pour water over, stirring, until sugar has completely dissolved.
- Stir in orange and lemon zest and juice, mixing well. Allow to cool, before storing in the fridge. Can be bottled and sealed in sterilised bottles.
- To serve, dilute the cordial by combining 2/3 cup cordial in 4 cups water. Serve chilled over ice.
