Fruit juice cordial

Fruit juice cordial by J. Hughes, Orange, NSW...
INGREDIENTS

1.5kg (7 cups) sugar
25g tartaric acid (see tip)
9 cups boiling water
finely grated zest and juice 2 oranges
finely grated zest and juice 2 lemons

METHOD

    In a jug, combine sugar and tartaric acid. Pour water over, stirring, until sugar has completely dissolved.
  1. Stir in orange and lemon zest and juice, mixing well. Allow to cool, before storing in the fridge. Can be bottled and sealed in sterilised bottles.
  2. To serve, dilute the cordial by combining 2/3 cup cordial in 4 cups water. Serve chilled over ice.


Top tip
Tartaric acid is available in the baking aisle at the supermarket
