Garlic chicken with fattoush for $10

INGREDIENTS
¼ cup olive oil
6 garlic cloves, crushed
4 chicken cutlets
Fattoush:
1 piece flat bread (or lebanese bread)
1 tablespoon olive oil
2 cucumbers, chopped
2 tomatoes, chopped
½ cup mint leaves
¼ cup parsley leaves
Juice ½ lemon
2 teaspoons sumac
Lemon wedges, to serve
METHOD
- Preheat oven to moderate, 180°C. Line an oven tray with foil.
- In a bowl, combine oil and garlic. Season, and mash to form a paste. Reserve 1 tablespoon and smear remaining paste over cutlets. Set aside for 15 minutes.
- Heat a non-stick frying pan on high. Cook chicken for 4-5 minutes each side. Place on tray and bake for 10-15 minutes.
- Fattoush: Meanwhile, brush flat bread with oil. Place on tray and bake for 5-8 minutes. Cool, then break into pieces. In a bowl, combine cucumber, tomato, herbs and bread. In a jug, whisk juice, remaining garlic oil (from chicken) and sumac. Season, then toss through salad. Serve with chicken and lemon wedges.
