Minute steak with tomato snake beans for $9.70

INGREDIENTS
1/3 cup olive oil
2 garlic cloves, sliced
½ bunch thyme, leaves removed
8 minute steaks
1 onion, chopped
1 bunch snake beans, cut into 3cm pieces
½ cup water
¼ cup tomato paste
1 tablespoon sugar
Lemon wedges, to serve
METHOD
- In a shallow dish, combine ¼ cup oil, garlic and thyme. Add steaks, turning to coat. Cover and marinate, chilled, for 20 minutes.
- Heat remaining oil in a frying pan on medium. Saute onion for 2-3 minutes, until tender. Stir in beans, water, tomato paste and sugar. Simmer, covered, for 10 minutes, until beans are tender. Season to taste.
- Meanwhile, heat a char-grill on high. Cook steak for 1-2 minutes each side, until done to taste. Serve with beans and lemon wedges.
Top tips- If liked, drain a little of the oil from the marinade and fry the garlic and thyme in a small frying pan, until garlic is crisp. Sprinkle over steaks to serve.
- If snake beans are unavailable, use plain green beans instead.
