Spicy Mexican pizza for $8.75

Spicy Mexican pizza
INGREDIENTS
1 large prepared plain pizza base
1/3 cup taco sauce
1 cup reserved cooked chicken mince
130g can red kidney beans, drained, rinsed
½ small red onion, thinly sliced
½ small red capsicum, seeded, thinly sliced
¼ cup coriander leaves
¾ cup grated mozzarella cheese (or mix of mozzarella, tasty and parmesan)
guacamole, sour cream, to serve
METHOD
- Preheat oven to hot, 200°C. Line an oven tray with baking paper (or use a pizza tray).
- Place pizza base on prepared tray. Spread with sauce.
- In a bowl, combine mince and beans. Spread over pizza base, then top with onion, capsicum, coriander and cheese.
- Bake for 10-15 minutes, until base is crisp and cheese melts. Serve in wedges topped with guacamole and sour cream.
Top TipMake your own chunky guacamole by mashing an avocado with a little lemon juice and chilli. Season to taste.
