Pork schnitzels with rocket salad

Pork schnitzels with rocket salad for $9.50
INGREDIENTS

1½ cup dry breadcrumbs
¼ cup grated parmesan cheese
1 tablespoon chopped parsley
4 pork steaks
2 tablespoons seasoned flour
1 egg, lightly beaten
30g butter
1 tablespoon oil
Lemon wedges, to serve

Salad:
1 bunch rocket, trimmed, washed
1 pear, cored, cut into slices
2 tablespoons oil
2 teaspoons balsamic vinegar
½ cup shaved parmesan

METHOD

  1. In a shallow dish, combine breadcrumbs, grated parmesan and parsley.
  2. Dust pork in flour, shaking off excess. Dip into egg, then breadcrumb mixture, pressing firmly. Chill for 20 minutes.
  3. Heat butter and oil in a large frying pan on medium. Cook pork for 3-4 minutes each side, until golden and cooked through. Drain on paper towel.
  4. Salad: Toss together rocket and pear. Drizzle combined oil and vinegar over. Top with shaved parmesan.
  5. Serve pork with salad and a lemon wedge.


Top tips
Crumb and cook double the amount of pork, and freeze or refrigerate half for burgers.
