Pork schnitzels with rocket salad for $9.50
INGREDIENTS
1½ cup dry breadcrumbs
¼ cup grated parmesan cheese
1 tablespoon chopped parsley
4 pork steaks
2 tablespoons seasoned flour
1 egg, lightly beaten
30g butter
1 tablespoon oil
Lemon wedges, to serve
Salad:
1 bunch rocket, trimmed, washed
1 pear, cored, cut into slices
2 tablespoons oil
2 teaspoons balsamic vinegar
½ cup shaved parmesan
METHOD
- In a shallow dish, combine breadcrumbs, grated parmesan and parsley.
- Dust pork in flour, shaking off excess. Dip into egg, then breadcrumb mixture, pressing firmly. Chill for 20 minutes.
- Heat butter and oil in a large frying pan on medium. Cook pork for 3-4 minutes each side, until golden and cooked through. Drain on paper towel.
- Salad: Toss together rocket and pear. Drizzle combined oil and vinegar over. Top with shaved parmesan.
- Serve pork with salad and a lemon wedge.
Top tipsCrumb and cook double the amount of pork, and freeze or refrigerate half for burgers.
