Corn and bacon fritters for $5.90

INGREDIENTS
300g can creamed corn
2 rashers rindless bacon, chopped
¾ cup self-raising flour, sifted
¼ cup finely chopped parsley
2 green onions, finely sliced
1 egg, lightly beaten
Tomato relish, salad, to serve
METHOD
- In a large bowl, combine corn, bacon, flour, parsley, green onions and egg. Season to taste.
- Heat a non-stick frying pan on medium. Brush with olive oil. Place heaped tablespoonfuls of the mixture into pan in 3 batches, and flatten slightly with a spatula.
- Cook for 1-2 minutes, each side, or until fritters are lightly browned and cooked through (see tip).
- Transfer cooked fritters to a plate. Cover with foil to keep warm while cooking the remaining fritters. Serve with tomato relish and salad.
Top tipWatch for bubbles appearing on the surface of the fritter — when they start to break, turn the fritter over. You may need to adjust the heat during cooking.
