Sausage jambalaya for $8.60
Sausage jambalaya
INGREDIENTS
2 tablespoons olive oil
6 pork sausages
1 red onion, chopped
1 red capsicum, seeded, chopped
2 garlic cloves, crushed
2 small red chillies, chopped
2 tablespoons tomato paste
½ teaspoon dried oregano
¼ teaspoon cayenne pepper
1 bay leaf
1½ cups long grain rice
400g can diced tomatoes
2 cups chicken stock
2 tablespoons chopped parsley, to serve
METHOD
- Heat half the oil in a large frying pan on high. Cook sausages for 3-5 minutes, turning, until golden. Remove from pan and slice thickly. Transfer to a plate.
- Heat remaining oil in same pan on high. Sauté onion, capsicum, garlic and chilli for 1-2 minutes, until tender. Stir in paste, spices and bay leaf. Add rice, stirring to coat.
- Blend in tomatoes and stock. Bring to boil on high. Reduce heat to low and return sausage to pan. Cook, covered, 25-30 minutes, until rice is tender and water absorbed. Serve topped with parsley.
Top tipChicken thigh fillets can be used in place of sausages.
