Parmesan fish with tomato relish for $9.90

INGREDIENTS
500g boneless fish fillets, cut into fingers
¼ cup seasoned flour
1 egg, lightly beaten
1 cup dry breadcrumbs
½ cup grated parmesan cheese
Oil for deep frying
Lemon wedges, rocket, to serve
Tomato relish:
1 tablespoon olive oil
1 red onion, chopped
1 garlic clove, crushed
400g can diced tomatoes
½ cup brown sugar
¼ cup red wine vinegar
¼ cup malt vinegar
METHOD
- Dust fish with flour. Dip into egg and coat in combined breadcrumbs and parmesan. Chill for 15 minutes.
- Tomato relish: Heat oil in a saucepan. Sauté onion and garlic 1-2 minutes. Stir in remaining ingredients. Season. Bring to boil, stirring. Reduce heat and simmer for 25-30 minutes until thickened. Cool.
- Heat oil in a deep pan until a small piece of bread sizzles immediately it is added.
- Deep-fry fish in batches for 1-2 minutes. Remove with slotted spoon. Drain on paper towel. Serve with lemon, rocket and relish.
