Artichoke and tomato fettuccine for $3.05 per serve

INGREDIENTS

fettuccine, 375g
olive oil, 1 tablespoon, plus extra to drizzle
rindless bacon, 2 rashers, chopped
garlic, 4 cloves, sliced
long red chilli, 1, chopped
artichokes, 400g can, drained, roughly chopped
cherry tomatoes, 250g punnet
lemon, 1, juice
basil leaves, 1 cup
parmesan cheese, grated, 1/4 cup, plus extra to serve
METHOD

  1. Cook pasta in a large saucepan of boiling salted water following packet instructions. Drain well and return to pan.

  2. Meanwhile, in a large frying pan, heat oil on medium. Cook bacon 2-3 minutes, until golden. Add garlic and chilli. Saute 30 seconds.

  3. Add artichoke, tomatoes and juice. Cook 2-3 minutes, until tomatoes
    begin to soften. Season to taste.

  4. Add to hot pasta with most of basil and parmesan. Serve sprinkled with remaining basil and parmesan, a drizzle of olive oil and a good grinding of black pepper.
