Roast fennel with fish for $3.75 per serve

INGREDIENTS

ennel, 1 bulb, sliced, fronds reserved
cherry tomatoes,
10, halved
zucchini, 1, sliced
extra-virgin olive oil, ¼ cup
lemon, 1, juice,
grated zest
maple syrup, 2 tablespoons
skinless fish fillets,
4 x 150g (we used basa)
ovenbaked potato wedges, 400g,
cooked
mixed salad leaves,
to serve
METHOD

  1. Preheat oven to hot, 200°C.

  2. In a small casserole dish, combine fennel, tomatoes and zucchini. Drizzle with half combined oil and juice, and syrup. Season to taste.

  3. Bake 15-20 minutes, until just starting to colour. Place fish on top and drizzle with remaining oil and juice. Sprinkle with zest and season to taste.

  4. Bake 10-12 minutes, until fish flakes easily when tested. Serve with wedges and salad.


TOP TIP
  • Look for same-sized pieces of fish, as this will ensure even cooking.

Never cook vegetables with fish as they have definitely a different cooking time......Cook the fish accordingly, or with oil and a clove of garlic and a rosemary branch, but the v getables have to be cooked separately ........The fennel especially take quite a long time to be cooked and it is fantastic sliced thinly cooked in a bit of butter, then add milk and let it cook slowly until the milk becomes cheesy and then you serv it topped with parmesan...the other vegetables only with a bit of of garlic and cook them quickly in the asian way.....let them be still crispy!!!
