Chicken and broccoli bake for $2.65 per serve

INGREDIENTS

short pasta, 2 cups
olive oil, 2 tablespoons
chicken thigh fillets, 5, cut into chunks
onion, 1 finely sliced
broccoli, 1 head, cut into florets, blanched
leek or mushroom soup, 420g can
sour cream, ½ cup
curry powder, 2 teaspoons
dry breadcrumbs, ½ cup
grated tasty cheese, ½ cup
green salad or steamed vegetables, to serve
METHOD

  1. Preheat oven to hot, 200°C. Spray a 12-cup casserole dish with oil. Cook pasta following packet instructions. Drain well.

  2. Meanwhile, heat half oil in a large, non-stick frying pan on high. Cook chicken 5-6 minutes, until golden brown. Transfer to bowl. Heat remaining oil in same pan and saute onion 3-4 minutes, until tender.

  3. Add broccoli, soup, sour cream and curry powder, stirring to combine. Mix chicken and pasta through. Spoon into casserole dish. Cover with foil. Bake 15 minutes.

  4. Remove foil, sprinkle with breadcrumbs and cheese. Bake a further 10-12 minutes, uncovered, until golden. Serve with green salad or steamed vegetables.

Recipe calls for a 420gram tin of Leek soup. Could you please advise as to what brand this is and where I can purchase
This dish (well not this exact recipe) was a favourite of mine growing up as a child. My mother still makes it for us when she visits! Thigh fillets are the way to go..we've tried it with breast pieces but the depth of flavour isn't there and they end up too dry! Yummo
