Sausage and pumpkin pasta bake for $7.70

1. Preheat oven to hot, 200°C. Line an oven tray with baking paper. Lightly grease 4 x 1½-cup ramekins.
   
   
2. Arrange pumpkin on tray. Drizzle with oil and season to taste. Bake 20-25 minutes, until tender and golden.
   
   
3. Meanwhile, heat frying pan on medium. Spray with oil and cook sausages 8-10 minutes, turning until brown and cooked through. Remove from pan and slice thinly.
   
   
4. In a large bowl, combine pasta, sauce, pumpkin, sausage, feta, capsicum, onion and garlic. Mix well and season to taste.
   
   
5. Spoon pasta mixture into ramekins. Bake 10-15 minutes, until lightly golden.
   Serve topped with mint leaves.

• You could spoon this into one large casserole dish and sprinkle with
  a little grated parmesan or tasty cheese before baking.
  
• A 400g can diced tomatoes could be used in place of the pasta sauce.
