Pasta with chorizo, spinach and ricotta for $7.50

INGREDIENTS
375g pasta shells
1 tablespoon olive oil
2 chorizo, sliced
1/3 cup sage leaves
150g ricotta cheese
100g baby spinach leaves
2 teaspoons chilli flakes
Crusty bread, to serve
METHOD
- Cook pasta in a large saucepan of boiling, salted water following packet instructions. Drain pasta, reserving ½ cup cooking liquid. Return pasta to pan.
- Heat oil in a large frying pan on high. Cook chorizo for 1-2 minutes each side, until crispy. Add sage and fry for 1 minute.
- Toss chorizo through pasta with ricotta, spinach, chilli and reserved cooking liquid over a low heat, until spinach wilts slightly and pasta is warm. Serve with crusty bread.
Top tipIf liked, add halved cherry tomatoes to the pan with the chorizo.
