Rogan josh meatballs for $9.80

INGREDIENTS
500g beef mince
2 teaspoons garam masala
1 teaspoon prepared minced ginger
1 tablespoon oil
1 onion, chopped
1 garlic clove, crushed
¼ cup rogan josh curry paste
270ml can coconut milk
2 tomatoes, chopped
1 potato, peeled, cubed
50g spinach leaves rice to serve
METHOD
- In a large bowl, combine mince, garam masala and ginger. Season to taste and roll into walnut-sized balls. Chill for 10 minutes.
- Heat oil in a large frying pan on high. Cook meatballs for 4-5 minutes, turning, until browned all over. Transfer to a plate.
- Saute onion and garlic in same pan for 2-3 minutes, until tender. Stir in curry paste and cook for 1 minute, until fragrant. Blend in coconut milk.
- Return meatballs to pan with tomatoes and potato. Bring to the boil on high. Reduce heat to low and simmer for 8-10 minutes, until potato is tender.
- Stir half the spinach through. Serve with remaining spinach and rice.
TOP TIP- Buy mince in bulk packs. Freeze in 500g portions in labelled freezer bags.
