Chicken stroganoff for $10

INGREDIENTS
30g butter
150g mushrooms, thinly sliced
1 onion, thinly sliced
2 garlic cloves, crushed
3 chicken thigh fillets, sliced
2 teaspoons paprika
½ cup chicken stock
¼ cup white wine
½ cup light sour cream
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
cooked fettucine, chopped parsley, to serve
METHOD
- Melt butter in a large saucepan on medium. Saute mushrooms, onion and garlic for 4-5 minutes, until tender. Add chicken. Cook on high for 4-5 minutes, until browned. Stir in paprika.
- Pour stock and wine over chicken mixture. Bring to the boil and cook for 2-3 minutes, until liquid is reduced by half. Reduce heat to low.
- Stir in sour cream, paste and sauce. Simmer for 1-2 minutes, until heated through. Serve with fettucine and sprinkle with parsley.
