INGREDIENTS
2 tablespoons oil
1 tablespoon mild English mustard
1 tablespoon brown sugar
1 tablespoon honey
1 tablespoon apple cider vinegar
Pinch each ground cinnamon and cloves
750g pork spare ribs, cut into chunks
Rice, char-grilled choy sum, to serve
METHOD
- In a large bowl, combine oil, mustard, sugar, honey, vinegar and spices.
- Add pork, tossing to coat. Chill, covered, for at least 30 minutes.
- Preheat a barbecue or char-grill on medium. Cook pork for 4-5 minutes, each side, until cooked to taste. Serve with rice and choy sum (see tip).
Top tips- Toss choy sum in a little oil and char-grill for 1-2 minutes until tender.
- You may need to finish cooking pork in the oven to prevent it from burning on the outside.
- Pork spare ribs may also be labelled as pork rashers.
