Rump steak with mini potato cakes for $9

INGREDIENTS
Chopped potato and kumara, pre-baked with oil and thyme
4 x 100g rump steaks
2 tablespoons oil
200g punnet grape tomatoes
100g green beans, trimmed, blanched
Prepared hollandaise, to serve
METHOD
- Place potato and kumara in a bowl. Season to taste. Mash roughly until combined. Form into 4 even-sized patties. Chill until required.
- Preheat a char-grill or barbecue on high.
- Place steaks in a shallow dish. Drizzle with oil and season to taste. Toss well.
- Char-grill steaks for 2-3 minutes each side, until cooked to taste. Rest, covered, for 5 minutes. Slice thinly.
- Meanwhile, heat a large frying pan on high. Cook potato patties for 4-5 minutes each side, until golden and warmed through. Cook tomatoes with patties, until tender.
- Serve steak with potato cake, tomatoes and beans. Drizzle with hollandaise.
Top tip- It may be cheaper to buy a large piece of rump and cut it into smaller portions.
- If liked, warm the hollandaise following packet instructions.
