Quick dhal for $7.30

INGREDIENTS
2 tablespoons oil
1 onion, thinly sliced
1 teaspoon brown sugar
2 tablespoons finely grated ginger
1 red chilli thinly sliced, optional
3 medium potatoes, peeled, chopped
1 tablespoon ground cumin
2 teaspoons mustard seeds
400g can diced tomatoes
1 cup chicken stock
400g can lentils, drained, rinsed
2 tablespoons chopped dill
Steamed rice, to serve
METHOD
- Heat half the oil in a large saucepan on medium. Saute onion for 4-5 minutes until tender. Stir in sugar and cook for a further 10 minutes until golden. Transfer to a bowl and set aside.
- Meanwhile, heat remaining oil in same pan on high. Saute ginger and chilli for 1-2 minutes, until fragrant. Add potatoes, cumin and mustard seeds, stirring for 1 minute. Mix in tomatoes and stock. Bring to the boil. Reduce heat to low and simmer, covered, for 10-15 minutes, until potatoes are just tender.
- Gently stir in lentils, cooked onion and half the dill. Cook for a further 5-10 minutes until liquid is almost evaporated and lentils are hot. Top dhal with remaining dill and serve with rice.
