Pork and apple kebabs

INGREDIENTS

½ cup apricot jam
2 tablespoons cider vinegar
1 tablespoon tomato paste
1 tablespoon olive oil
4 small pork leg steaks, cubed
1 red onion, cut into wedges
1 green apple, cored, cut into cubes
½ red capsicum, seeded, cut into cubes
8 bamboo skewers, soaked

Couscous:
1 cup couscous
1 cup boiling water
2 tablespoons chopped parsley

METHOD

  1. In a shallow dish combine jam, vinegar, tomato paste and oil. Add pork, turning to coat. Allow to marinate for at least 15 minutes.
  2. Thread pork, onion, apple and capsicum alternately onto pre-soaked skewers.
  3. Heat frying pan or barbecue to medium. Brush lightly with oil. Cook kebabs for 10-15 minutes, turning, until cooked to taste.
  4. Couscous: Meanwhile, combine couscous and water in a bowl. Cover with plastic wrap and set aside 5 minutes. Fluff with a fork to separate grains. Stir parsley through. Season to taste. Serve kebabs with couscous.


Top tips:
  • If kebabs start to get too brown, finish cooking in a moderate oven, 180°C.
  • Try chicken thigh fillets in place of pork.
