Pork and apple kebabs for $9

INGREDIENTS
½ cup apricot jam
2 tablespoons cider vinegar
1 tablespoon tomato paste
1 tablespoon olive oil
4 small pork leg steaks, cubed
1 red onion, cut into wedges
1 green apple, cored, cut into cubes
½ red capsicum, seeded, cut into cubes
8 bamboo skewers, soaked
Couscous:
1 cup couscous
1 cup boiling water
2 tablespoons chopped parsley
METHOD
- In a shallow dish combine jam, vinegar, tomato paste and oil. Add pork, turning to coat. Allow to marinate for at least 15 minutes.
- Thread pork, onion, apple and capsicum alternately onto pre-soaked skewers.
- Heat frying pan or barbecue to medium. Brush lightly with oil. Cook kebabs for 10-15 minutes, turning, until cooked to taste.
- Couscous: Meanwhile, combine couscous and water in a bowl. Cover with plastic wrap and set aside 5 minutes. Fluff with a fork to separate grains. Stir parsley through. Season to taste. Serve kebabs with couscous.
Top tips:- If kebabs start to get too brown, finish cooking in a moderate oven, 180°C.
- Try chicken thigh fillets in place of pork.
