Honey and mustard pork ribs for $10

INGREDIENTS
1 beef stock cube
1 cup boiling water
¼ cup honey
2 tablespoons wholegrain mustard
2 tablespoons oil
2 onions, cut into wedges
500g barbecue pork ribs, cut into 4
2 apples, cored, cut into wedges
1 tablespoon white-wine vinegar
½ iceberg lettuce, cut into wedges
METHOD
- Preheat oven to moderate, 180°C.
- In a large jug, dissolve the stock cube in boiling water. Whisk in the honey and mustard.
- Heat half the oil in a large frying pan on medium. Sauté onion for 2-3 minutes, until golden. Transfer to a baking dish.
- Sear ribs in the same frying pan on high for 2-3 minutes on each side. Transfer to the baking dish with the onion. Scatter apple around the pork. Pour over stock mixture and turn to coat.
- Bake for 40-45 minutes, basting occasionally, until the pork is cooked through and the apple is tender.
- In a jug, whisk together the remaining oil and vinegar. Season to taste. Drizzle over the lettuce wedges. Serve ribs with lettuce salad.
