Thai beef salad

INGREDIENTS
olive oil, 2 teaspoons
beef fillet, 350g, trimmed
mint, 1 bunch, leaves picked
coriander, 1 bunch, leaves picked
basil, ½ bunch, leaves picked
snow-pea sprouts, 1 cup
cherry tomatoes, 250g, halved
Lebanese cucumber, 1, halved lengthwise, sliced
red onion, 1, thinly sliced
lime cheeks, to serve
DRESSING
sweet chilli sauce, 1/3 cup
lime, 1, finely grated zest
and juice
fish sauce, 1 tablespoon
garlic clove, 1, crushed
METHOD
- Heat oil in a large frying pan on high. Cook beef 3-4 minutes each side, until cooked to taste. Set aside and cover to keep warm.
- DRESSING: In a jug, whisk together all ingredients. Set aside.
- In a large bowl, combine herbs, sprouts, tomatoes, cucumber and onion.
- Slice beef thinly. Arrange over salad and drizzle with dressing just before serving.
TOP TIP- This salad is also delicious made with chicken or pork.
- For extra bite, you could add a sliced fresh chilli, if liked.
