Chicken Nuggets

INGREDIENTS

500g chicken breast or thigh fillets, cut into chunks
1 cup mayonnaise
4 cups crushed cornflakes
2 teaspoons mild paprika
2 teaspoons garlic salt
1 teaspoon dried mixed herbs
1 teaspoon cracked black pepper
sweet and sour sauce, to serve
FRIED RICE
1 tablespoon oil
1 cup frozen mixed vegetables
1 garlic clove, crushed
½ teaspoon grated ginger
2 cups cooked long grain rice
METHOD

  1. Preheat oven to a hot, 200°C. Line an oven tray with baking paper.

  2. Place chicken in a bowl with mayonnaise. Toss to coat.

  3. Combine cornflake crumbs, paprika, garlic salt, herbs and pepper in a bowl. Remove 1 piece of chicken from the mayonnaise, and wipe off excess. Coat chicken in crumb mixture. Place on tray. Repeat with remaining chicken and crumb mixture. Spray chicken with oil.

  4. Bake 15-20 minutes, turning halfway, until golden and cooked through.

  5. FRIED RICE: Meanwhile, heat oil in a large wok or frying pan on high. Stir-fry vegetables 1-2 minutes. Add garlic and ginger and stir-fry 1 minute. Add rice. Cook, tossing, until well combined and hot. Serve nuggets with rice and sauce.


TOP TIP
  • For easy coating, combine all crumb ingredients in a plastic bag and shake to coat 3-4 pieces of chicken at a time.
