INGREDIENTS

1 radicchio lettuce, leaves separated
(see tip)
3-4 ripe figs, sliced
(see tip)
1 Granny Smith apple, cored, thinly sliced
50g blue cheese,
thinly sliced
¼ cup roasted hazelnuts, skins removed, chopped
DRESSING
2 tablespoons extra-virgin olive oil
1 tablespoon white
wine vinegar
1 teaspoon honey

METHOD

Makes 12

1. In a large salad bowl, layer leaves, figs, apple and cheese.
   
   
2. DRESSING: In a small jug, whisk all ingredients together. Season to taste.
   
   
3. Just before serving, drizzle dressing over salad and scatter with nuts.

TOP TIP

• Radicchio is a variety of bitter winter lettuce. It can be replaced with witlof or mixed salad leaves, if preferred.
  
• If figs are unavailable or too expensive, use persimmons, pawpaw or plums instead.
