Crunchy BLT salad

Crunchy BLT salad

INGREDIENTS

2 turkish bread rolls, torn into croutons
2 tablespoons olive oil
100g thinly sliced prosciutto or bacon
2 baby cos lettuces, trimmed, leaves separated, washed
1 avocado, seed removed, peeled,
thinly sliced
275g tray truss cherry tomatoes, halved
DRESSING
2 soft boiled eggs, peeled, chopped
(see tip)
2 tablespoons lemon juice
1 tablespoon chopped parsley
1 small garlic clove, peeled, chopped
1 teaspoon wholegrain mustard
¼ cup olive oil
METHOD

  1. Preheat oven to hot, 200°C. Line 2 oven trays with baking paper.

  2. Arrange bread on one tray. Drizzle with oil and season to taste. Toss to coat. Place prosciutto on remaining tray. Bake both trays for 10-12 minutes until crisp. Set aside.

  3. DRESSING: Place eggs, juice, parsley, garlic and mustard in a food processor. Process until smooth. With motor running, gradually add oil in a thin stream until thick. Season to taste.

  4. Break prosciutto into pieces. Arrange lettuce, avocado, tomatoes, croutons
    and prosciutto on platter. Drizzle dressing over and garnish with cracked black pepper.



TOP TIP
  • Place a cold egg into cold water, bring to boil and boil for 1 minute.
  • You can add slices of grilled chicken or turkey breast.
