Nasi goreng

INGREDIENTS

2 tablespoons peanut oil
200g chicken thigh fillet,
finely chopped
10 green king prawns, shelled, deveined, halved
4 green onions, sliced into
3cm batons
2 garlic cloves, chopped
1 red chilli, chopped
3 cups cooked long-grain
rice
1½ tablespoons kecap manis (sweet soy sauce)
juice 1 lime
1 tablespoon tomato sauce
2 teaspoons fish sauce
1/3 cup coriander leaves, plus extra, to serve
4 fried eggs, lime, tomato
wedges, cucumber batons,
to serve
METHOD

  1. Heat half the oil in a large wok or frying pan on high. Stir-fry chicken and prawns for 2-3 minutes, until cooked. Transfer to a large bowl.

  2. Heat remaining oil on medium. Stir-fry green onion, garlic and chilli for 1 minute, until fragrant.

  3. Add rice, stirring to break up any lumps. Mix in kecap manis, juice, sauces and coriander. Stir-fry for 2-3 minutes, until heated through. Serve with fried egg, lime, tomato and cucumber, and top with extra coriander.


TOP TIP
  • n This recipe is a great way to use leftover rice.
  • For a last-minute dinner, replace the chicken thigh and prawns with shredded barbecued chicken.
  • You need 1 cup of raw rice to make 3 cups cooked – allow it
    to cool before adding to this dish.
