vegetable oil, 1 tablespoon
cup mushrooms, 150g, sliced
green onions, 2, white and green parts chopped separately
baby spinach, 300g
tamari, 1 tablespoon
sesame seeds, 1 tablespoon
sesame oil, 2 teaspoons
rice wine vinegar, 1 tablespoon
cooked soba noodles, to serve
- Heat oil in a large wok on high. Stir-fry mushroom and white of onions 2-3 minutes, until tender.
- Add spinach, green of onions, tamari, seeds and oil. Stir fry 1-2 minutes,
until just wilted. Toss vinegar and cooked noodles through.
- Accompany with a little extra tamari – a Japanese soy, made without wheat.
