Barbecued pork ribs

INGREDIENTS
½ cup tomato sauce
¼ cup honey
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 teaspoon powdered mustard
2 garlic cloves, crushed
1.5kg American pork ribs
oil, for brushing
METHOD
- In a ceramic dish, combine sauce, honey, hoisin, soy, mustard and garlic. Add ribs, turning to coat. Cover and chill for 1 hour.
- Preheat a covered barbecue to slow, 150°C. Line a baking pan with foil. Place ribs on rack in pan. Barbecue, covered, for 45-50 minutes, turning once.
- Meanwhile, preheat barbecue plate or grill to hot and brush with a little oil. Cook ribs for 10-15 minutes, turning occasionally and basting with remaining marinade, until golden and crisp. Slice between ribs and serve with parmesan & olive pull-apart.
TOP TIP- Prepare this ahead of time to the end of step 2. Cool and store, covered, in the fridge for up to 24 hours before barbecuing.
