Linguine with artichokes, tomato & parsley for $9.25

INGREDIENTS
375g packet linguine
340g jar artichoke hearts, drained, quartered
250g punnet grape tomatoes, quartered
1/2 cup parsley leaves
1/3 cup grated parmesan, plus extra,
to garnish
1 tablespoon olive oil
20g butter
lemon wedges, to serve
METHOD
- Cook linguine in a large saucepan of boiling, lightly salted water,
following packet instructions. Drain well. Return to pan.
- While pasta is hot, toss artichokes, tomatoes, parsley, parmesan, oil and butter through. Season to taste, tossing well. Serve with a wedge of lemon.
TOP TIPS- Accompany with crusty bread and salad.
- Olives, chopped prosciutto or char-grilled vegetables of choice can be added to this pasta.
