Coconut banana loaf

INGREDIENTS
2 small bananas
1 cup self-raising flour
½ teaspoon ground cinnamon, plus extra, to sprinkle
1 cup desiccated coconut
¾ cup caster sugar
¾ cup milk
butter, to serve
METHOD
- Preheat oven to moderately hot, 190°C. Lightly grease a 14 x 21cm loaf pan. Line base and sides with baking paper.
- In a bowl, mash one banana. Thinly slice the remaining banana.
- Sift flour and cinnamon together into a large bowl. Stir in coconut and sugar. Mix in milk and
mashed banana.
- Spoon mixture into prepared pan. Top with sliced banana and sprinkle with a little extra cinnamon.
- Bake for 35-40 minutes, until cooked when tested with a skewer. Cool in pan for 5 minutes before transferring to a wire rack to cool completely. Serve sliced with butter.
