Chocolate cake

INGREDIENTS
1¼ cups self-raising flour
2 tablespoons cocoa powder
¼ teaspoon bicarbonate of soda
1 cup caster sugar
¾ cup milk
125g butter, melted
2 eggs, lightly beaten
1 teaspoon vanilla extract
CHOCOLATE FROSTING
1 cup icing sugar
¼ cup cocoa powder
30g butter, at room temperature
2 tablespoons hot water
METHOD
- Preheat oven to moderate, 180°C. Lightly grease a 20cm round cake pan. Line base and sides with baking paper.
- Sift flour, cocoa and soda in a large bowl. Add remaining ingredients. Using an electric mixer, beat mixture for 5-8 minutes, until creamy and smooth.
- Pour into prepared pan. Bake for 45-50 minutes, or until cooked when tested with a skewer. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
- CHOCOLATE FROSTING. Meanwhile, in a medium bowl, combine all ingredients. Beat with a wooden spoon until smooth. Spread frosting over cooled cake.
TOP TIP- Cake is cooked if a skewer inserted into the centre is clean and dry when removed.
